As Co-Founder and President of Green Spot Technologies, Granucci is rethinking food production by turning what we typically discard, fruit peels, seeds, hulls, into nutrient-rich, versatile powders. Her work isn’t just a scientific breakthrough, it’s a blueprint for how biotech can upend industrial waste and nutrition simultaneously.

From Lab to Impact: The Science of Upcycling

Granucci’s patented fermentation platform doesn’t just reduce waste. It transforms food side-streams into high-fiber, flavor-rich powders ready to be used in baking, cereals, and meat alternatives. The platform ferments, dries, and grinds food by-products, like apple pomace or carrot peels, creating ingredients that meet both functional and nutritional needs.

“Food by‑products like seeds and hulls… we ferment, dry, and grind these into a powder,” she explains. “Our fermentation platform transforms and upcycles these side streams.”

In doing so, Green Spot Technologies has already upcycled over 150 tons of food waste, avoiding 450 tons of CO₂ emissions, and delivering enough fiber to cover the nutritional needs of 42% of France’s population.

Building a New Category in Food Tech

What sets Granucci apart is her ability to bridge science, sustainability, and commercial viability. With collaborations that include Kraft Heinz, her company is helping giants of the food industry rethink their approach to ingredients. Green Spot’s powders offer clean-label functionality and sustainability credentials, two powerful forces in today’s consumer market.

Her platform’s novel approach to microbial fermentation has garnered attention not only from industry but also from science. Granucci has authored multiple peer-reviewed papers and her research has been cited over 270 times in academic literature focused on food microbiology and biotechnology.

Recognized as a Pioneer in Europe and Beyond

In recent years, Granucci’s impact has extended far beyond the lab and into the innovation ecosystem. She was awarded the EU Women Innovators Prize (2022) and the Science & Technology Pioneer Award, and was named a Cartier Women’s Initiative Fellow in 2024, a testament to her influence as a tech-for-good founder and public voice for female-led innovation.

Her company is also supported by the European Innovation Council, spotlighting her as a leading example of European entrepreneurship that blends scientific advancement with environmental purpose.
